While I strive to prepare meals myself for my housemates, they often prefer meat-based dishes, making my main course planning a bit tricky. Although I frequently make stir-fried pork (Jeyuk Bokkeum), which they absolutely love, I found myself with some aged kimchi leftover recently. This inspired me to create a fusion dish: stir-fried pork with kimchi, served alongside warm tofu. This recipe elevates the classic Dubu Kimchi (Tofu with Kimchi) into something truly special, bursting with flavor. I’m excited to share this golden recipe for a more flavorful Tofu Kimchi with you all!

  • 1/2 block Tofu (approx. 300g)
  • 150g Aged Kimchi
  • 200g Pork Belly
  • 1/2 Onion
  • 1 stalk Green Onion
  • 1 Cheongyang Pepper (optional, for extra spice)
  • 1/2 Tbsp Sesame Oil
  • A pinch of Toasted Sesame Seeds

Spicy Pork Kimchi Seasoning

  • 1 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Mirin (rice wine for cooking)
  • 1 Tbsp Minced Garlic
  • 1/3 tsp Black Pepper
  • 2 Tbsp Kimchi Brine
  • 1/2 Tbsp Sugar

Cooking Instructions

First, let’s prepare the vegetables. Slice the green onions lengthwise and then cut them into 4cm segments. Slice the onion into approximately 0.7cm thick slices. If you desire more heat, finely chop the Cheongyang pepper into about 0.5cm pieces.

It’s best to use well-fermented, aged kimchi for this recipe. Cut the kimchi into roughly 2cm pieces.

Cut the tofu into generous 1cm thick slices. Slicing them a bit thicker helps prevent them from breaking apart during cooking.

Cut the pork belly into sizable pieces, about 3-4cm. They will shrink as they cook, so don’t worry about making them too small. Now, let’s make the delicious seasoning! In a bowl, combine 1 Tbsp Gochujang, 1 Tbsp Gochugaru, 1 Tbsp Soy Sauce, 1 Tbsp Mirin, 1 Tbsp Minced Garlic, 1/3 tsp Black Pepper, 2 Tbsp Kimchi Brine, and 1/2 Tbsp Sugar. Mix well until fully combined.

Preheat a large pan over high heat for about 3 minutes. Reduce the heat to medium and add the pork belly. Stir-fry for 5-7 minutes until the pork is nicely browned and cooked through. Ensure you stir frequently for even cooking.

During the stir-frying process, carefully remove any excess oil from the pan using a paper towel. This step helps to reduce greasiness and makes the dish lighter.
