  • 2 Tbsp Guk-ganjang (Korean soup soy sauce)
  • 1 Tbsp minced garlic
  • A pinch of black pepper (to taste)

Cooking Instructions

Step 1

First, let’s make the essential seasoning paste for this delicious stew. In a bowl, combine 1 Tbsp Gochujang, 2 Tbsp Gochugaru, 1 Tbsp fish sauce, 2 Tbsp Guk-ganjang, 1 Tbsp minced garlic, and a pinch of black pepper. Mix thoroughly until smooth, ensuring there are no lumps. This paste is key to the stew’s overall flavor, so take your time to mix it well.

Step 2

Now it’s time to cook the stew. In a pot, arrange the large pieces of leek, cubed tofu, sliced king oyster mushroom, and finely chopped Cheongyang chili pepper. Drizzle the prepared seasoning paste evenly over the ingredients, then pour in 500ml of the prepared broth. Bring to a boil over high heat.

Step 3

Once the stew comes to a rolling boil, reduce the heat to medium-low and simmer for about 5-7 minutes, or until all the ingredients are tender and cooked through. It’s important to let the tofu cook and the mushrooms release their flavors. Just before turning off the heat, drizzle in 1 Tbsp of perilla oil for an added nutty aroma and richer taste. Enjoy this comforting stew with a hot bowl of rice!
