This is a wonderfully soft and fragrant curry soft tofu stew, infused with a gentle curry aroma that even children will enjoy without hesitation. Experience the magical taste that will have you finishing your rice bowl in no time!
Main Ingredients- 1 packet soft tofu (approx. 350-400g)
- 2 Tbsp minced onion (approx. 30g)
- 1 Tbsp minced green onion (approx. 15g)
- 1 Tbsp minced carrot (approx. 15g)
- 2 Tbsp ground pork or beef (approx. 30g)
- 1 cup water or broth (approx. 200ml)
Curry Seasoning- 3 Tbsp curry powder (using a standard tablespoon)
- Pinch of salt (to taste)
- Pinch of black pepper (to taste)

Cooking Instructions
Step 1
Before you begin cooking, finely mince the onion, green onion, and carrot. Mincing them finely with a knife or food processor will result in a smoother texture. If your ground meat is frozen, thaw it before use.
Step 2
Heat a pot over medium heat with a little cooking oil. Add the minced onion, green onion, carrot, and ground meat. Stir-fry for about 2-3 minutes until the meat is no longer pink and the vegetables become translucent. Stir-frying like this enhances the flavors of the ingredients.
Step 3
Once the meat and vegetables are well stir-fried, pour in 1 cup (approx. 200ml) of water or broth and bring it to a boil. Let it boil over high heat, then reduce to medium heat and simmer for another 2-3 minutes to allow the flavors to meld.
Step 4
When the broth comes to a boil, add 3 tablespoons of curry powder and whisk until it’s smoothly dissolved without any lumps. Reduce the heat to medium-low and continue to simmer for 2-3 minutes, stirring constantly to prevent sticking, allowing the curry flavor to deepen. You’ll start to smell that delicious curry aroma filling your kitchen!
Step 5
Now, gently add the soft tofu in large chunks. Try to add it in 2-3 large spoonfuls. Carefully handle the tofu to avoid breaking it. Continue to simmer for about 2-3 minutes until the tofu is heated through.
Step 6
Finally, taste the stew and adjust the seasoning with salt if needed. If you prefer a richer curry flavor, you can add another 1/2 to 1 tablespoon of curry powder and let it simmer. A sprinkle of black pepper adds a nice finish. Serve immediately while hot with rice!
