This recipe introduces a super simple tomato pasta that uses up your leftover vegetables and frozen seafood for a satisfying meal. You can achieve a rich flavor without needing special ingredients!
Main Ingredients- Pasta (1 serving portion, approx. 80-100g)
- Bell pepper 1/2
- Onion 1/2
- Shrimp 7 (thaw if using frozen)
- Tomato sauce 2 cups (store-bought or homemade)

Cooking Instructions
Step 1
In a large pot of boiling water with a pinch of salt, cook 1 serving of pasta for about 9 minutes. While the pasta is cooking, drizzle 1 tsp of olive oil over it and toss to prevent sticking. Reserve about 2 cups of the pasta cooking water; you’ll use this later for the sauce.
Step 2
Utilize any leftover vegetables you have in your refrigerator. Dice the bell pepper and onion into approximately 1cm cubes. Feel free to add other vegetables like broccoli, mushrooms, or different colored bell peppers if you have them.
Step 3
If using frozen shrimp, thaw them completely by soaking them in cold water. Once thawed, rinse the shrimp lightly under running water and pat them dry. If using fresh shrimp, peel and devein them before preparation.
Step 4
Heat 1 tsp of olive oil in a pan over medium-low heat. Sauté the minced garlic until fragrant, then increase the heat to medium and add the diced bell pepper, onion, and any other chopped vegetables. Stir-fry until the vegetables begin to soften and become slightly translucent. Add the thawed shrimp and cook until they turn pink.
Step 5
Once the vegetables and shrimp are cooked, pour in the 2 cups of tomato sauce and the reserved 2 cups of pasta cooking water. Bring the sauce to a simmer, then reduce the heat to low. Season with salt to your preference. Finally, add the cooked pasta to the pan, tossing well to coat it evenly with the sauce. Continue to cook for another 1-2 minutes until the sauce has thickened slightly. Your delicious tomato pasta is ready!
