  • Pinch of black pepper

Cooking Instructions

Step 1

Let’s get started on this delicious Budae Jjigae! You can already smell the wonderful aroma.

Step 1

Step 2

Prepare your ingredients: slice the onion and green onion, and cut the Spam, Vienna sausages, and bacon into bite-sized pieces. Finely chop the Cheongyang chili pepper to add to the seasoning mix.

Step 2

Step 3

In a bowl, combine the chopped Cheongyang chili pepper with all the seasoning mix ingredients: gochugaru, gochujang, minced garlic, soy sauce, mirin, and black pepper. Mix them well to create the seasoning paste.

Step 3

Step 4

Arrange the prepared meats and vegetables attractively around the edges of a wide, shallow pot or a Korean hot pot. Leave a slight space in the center for the ramen noodles.

Step 4

Step 5

Once everything is arranged, pour the 600ml of rice water into the pot. Stir in the prepared seasoning mix and dissolve it completely. (For an even richer flavor, you can use commercial beef broth or bone broth instead of rice water.)

Step 5

Step 6

Ensure the seasoning mix is well dissolved into the broth. (Optional: Adding a bit of ramen soup powder at this stage can enhance the umami flavor.)

Step 6

Step 7

With the seasoning mix fully incorporated, add the ramen noodles to the pot. Bring it to a boil over high heat and let it simmer until the noodles are cooked.

Step 7

Step 8

When the ramen noodles are almost cooked, add the King Oyster mushrooms (or other prepared mushrooms) and let it bubble for another moment. Your delicious Budae Jjigae is now ready!

Step 8

Step 9

For variations, you can add dumplings or use glass noodles (dangmyeon) instead of ramen. If you enjoy cheese, a slice of cheddar cheese on top is also a great addition!

Step 9

Step 10

Don’t forget the essential fried rice at the end! Simply add a tablespoon of sesame oil and some seaweed flakes to the leftover broth and rice, and stir-fry. It’s incredibly delicious even without extra seasonings!
