  • 1.5 Tbsp Sesame Oil
  • 1/2 Tbsp Soy Sauce for Soup (Guk-ganjang)

First, rinse 1 cup of rice thoroughly and soak it for about 30 minutes. Soaking the rice makes it softer and more delicious.

Prepare the king oyster mushrooms by cleaning them. Thinly slice a small portion from the top for garnish and set aside. Dice the remaining mushrooms into about 1cm cubes. This size is key for a pleasant chewy texture!

Heat 1.5 tablespoons of sesame oil in a Staub pot (or any heavy-bottomed pot) over medium heat. Add the diced king oyster mushrooms and sauté until they soften slightly and release their aroma. It’s important to stir-fry them until they become tender and fragrant.

Once the mushrooms are slightly tender, add the soaked rice. Gently stir with a spatula to evenly mix the rice and mushrooms. Stir-frying for about 1 minute coats the rice grains in oil, which helps make the final rice fluffy and separate.

Now, add 1/2 tablespoon of soy sauce for soup (Guk-ganjang). Adding this soy sauce as a base seasoning will add a deeper, more complex flavor to the rice and mushrooms.

The standard rice-to-water ratio is typically 1:1. However, since king oyster mushrooms release a lot of moisture, it’s best to reduce the water slightly to a ratio of about 1:0.8. For 1 cup of rice (200ml), add approximately 160ml of water. Place the pot over medium-high heat and bring to a boil.

Once the water starts boiling vigorously, cover the pot with a lid and reduce the heat to the lowest setting. Let it simmer gently for about 15 minutes. Be careful not to let it burn; slow and steady cooking is crucial here.
