Let me guide you through this easy and tasty zucchini stir-fry!
Ingredients- 1 medium zucchini
- 1 Tbsp minced garlic
- 2/3 Tbsp saeujeot (fermented shrimp)
- 3 pinches salt
- 3 Tbsp cooking oil
- 1 Tbsp sesame seeds
- 1 Tbsp sesame oil
- Pinch of black pepper
Cooking Instructions
Step 1
Prepare 1 medium-sized zucchini. Ensure it’s fresh and firm.
Step 2
Wash the zucchini thoroughly under running water. Trim off both ends, then slice it thinly into half-moon shapes, about 0.1-inch thick. Slicing too thick can result in longer cooking times.
Step 3
Heat 3 tablespoons of cooking oil in a pan over medium-low heat. Add 1 tablespoon of minced garlic. It’s important to manage the heat to prevent the garlic from burning.
Step 4
Gently sauté the minced garlic, stirring constantly, over medium-low heat until it becomes fragrant and lightly golden. This step infuses the oil with a wonderful garlic aroma.
Step 5
Once the garlic is fragrant and lightly browned, add all the sliced zucchini to the pan. Begin to stir-fry them with the garlic and oil. Cooking over medium heat is recommended.
Step 6
As the zucchini starts to soften and wilt slightly, add 2/3 tablespoon of saeujeot. Stir well to distribute. Season the stir-fry with 3 pinches of salt, adjusting to your taste preference, after the saeujeot has been incorporated. You can adjust the amount of saeujeot based on your liking.
Step 7
Add 1 tablespoon of sesame seeds and stir-fry briefly, just to combine everything. Avoid overcooking; the zucchini should retain a slight crispness. Overcooking will make it mushy, so turn off the heat when it’s tender-crisp.
Step 8
Turn off the heat. Drizzle in 1 tablespoon of sesame oil and add a pinch of black pepper. Toss gently to finish. This adds a final layer of aroma and flavor.
Step 9
Your delicious stir-fried zucchini with saeujeot is ready! Enjoy its delightful crisp texture and savory taste. It’s perfect served over warm rice or mixed into bibimbap for an extra burst of flavor.
