Crispy on the outside and moist on the inside, oyster pancakes are a favorite dish for everyone from children to adults, and are especially great as a snack with drinks or for special holiday meals. This oyster dish is even more appealing because it can be completed simply without complex steps.
Ingredients- 300g fresh oysters
- 3 eggs
- 3 Tbsp all-purpose flour
- 2 Tbsp chopped green onion
- Pinch of salt (for egg wash seasoning)
- 0.5 Tbsp coarse salt (for cleaning oysters)
- Plenty of cooking oil
Cooking Instructions
Step 1
First, prepare 300g of fresh oysters. Add 0.5 Tbsp of coarse salt to a bowl and gently shake the oysters to clean them. This process helps remove any unpleasant odor and thoroughly cleans the oysters. After washing, it’s crucial to drain them completely using a colander.
Step 2
Finely chop about 2 Tbsp of green onion. This not only adds flavor to the oyster pancake but also provides a pleasant texture. If you like, you can also add finely chopped red chili peppers or jalapeños for an extra kick.
Step 3
Place the drained oysters into a clean plastic bag. Add 3 Tbsp of all-purpose flour. Gently shake the bag or lightly knead the oysters to ensure they are evenly coated with a thin layer of flour. This flour coating helps the oysters become crispier as they cook.
Step 4
In a separate bowl, crack 3 eggs and add a pinch of salt. Whisk them well. Lightly salting the egg wash will help season the oyster pancake.

Add the 2 Tbsp of chopped green onion to the beaten eggs and mix thoroughly. Ensure the green onions are evenly distributed throughout the egg mixture.

Now, carefully dip the flour-coated oysters into the prepared egg mixture. Gently place them in the egg wash, trying not to let them clump together.

Using chopsticks, gently separate the oysters so they don’t stick together. When the oysters are separated, they will cook more evenly and result in a more appealing presentation.

Heat a frying pan over medium heat and generously add cooking oil. Be mindful of the oil temperature; if it’s too low, the pancake will absorb too much oil, and if it’s too high, the outside might burn before the inside is cooked.

Once the pan is sufficiently hot, carefully pour in the oyster and egg mixture. Gently spread the oysters evenly across the bottom of the pan using a spoon or spatula. Since the egg mixture can burn quickly, reduce the heat to low and cover the pan with a lid to allow the inside to cook through until it’s moist and tender.
Step 10
When the bottom side is golden brown and cooked through, carefully flip the pancake using a spatula. After flipping, cover the pan again and continue cooking on low heat until the other side is also fully cooked. This completes your delicious pan-fried oyster pancake! For an extra special treat, serve it with a dipping sauce made of 2 Tbsp soy sauce, 1 Tbsp vinegar, 0.5 Tbsp sugar, and 1 Tbsp water.
