  • Zucchini, 1/4 medium (finely diced)
  • Shimeji mushrooms, a small handful (trim ends, then roughly chop or shred)
  • Onion, 1/4 medium (finely minced)
  • Scallion (green onion), 1/3 stalk (white part primarily, finely minced)
  • Warm cooked rice, 2 bowls

Seasoning & Others

  • Minced garlic, 1 Tbsp
  • Cooking wine (mirin or sake), 1 Tbsp
  • Crab-flavored soy sauce, 1 Tbsp (or regular soy sauce if unavailable)
  • Cooking oil, 1 Tbsp
  • Oyster sauce, 1 Tbsp
  • White pepper, a pinch

Cooking Instructions

Step 1

First, prepare all the ingredients for the fried rice by cutting them into bite-sized pieces that are easy for children to eat. For the pineapple, remove the core and cut it into roughly 1cm cubes. Finely mince the zucchini, onion, and scallions. For the shimeji mushrooms, roughly chop them or shred them with your hands for a pleasant texture. Have your warm cooked rice ready, as this will help prevent the rice from clumping when stir-frying.

Heat 1 tablespoon of cooking oil in a pan over medium-low heat. Add the finely minced onion, scallions, and minced garlic. Sauté for 1-2 minutes until fragrant, which helps to bring out the natural sweetness of the vegetables. Be careful not to burn them.

Add the ground pork to the pan and stir to break it up. Cook until the pork is no longer pink. Season with a pinch of white pepper, then add 1 tablespoon of crab-flavored soy sauce and 1 tablespoon of cooking wine. Stir well to combine and cook until the pork is fully cooked through, ensuring any gamey odors are removed and flavor is enhanced.
