Spicy and Sweet Chewy Stir-fried Noodles (Jjolbokki)

Korean street food is always a delight! Today, we’re making a simple Jjolmyeon Tteokbokki using leftover Jjolmyeon noodles. This dish is a fantastic combination of chewy noodles and chewy rice cakes in a sweet and spicy sauce.
Main Ingredients- Jjolmyeon noodles (Korean chewy noodles) 200g
- Tteokbokki rice cakes 200g
Cooking Instructions
Step 1
First, prepare 200g of Jjolmyeon noodles. Separate the noodles so they aren’t stuck together, and then briefly rinse them under cold water. This helps to make them chewier.
Step 2
Similarly, soak about 200g of Tteokbokki rice cakes in cold water for a short while. This will soften them and allow them to absorb the sauce better.
Step 3
Wash and peel half an onion, then slice it thinly. Sliced onions will add sweetness and a pleasant texture as they cook.
Step 4
Now, let’s make the delicious Jjolbokki sauce. In a wide pan, add 400ml of water. Then, add 2 Tbsp of Gochujang, 1.5 Tbsp of sugar, 1 Tbsp of minced garlic, and 1 Tbsp of soy sauce. Stir well with a spoon to ensure there are no lumps in the sauce. Bring this mixture to a boil over high heat before proceeding to the next step.
Step 5
Once the sauce begins to bubble vigorously, add all the pre-sliced onions to the pan. The onions will cook down, adding sweetness and umami to the sauce.
Step 6
Add 0.5 Tbsp of chicken stock for an extra boost of flavor. If you don’t have chicken stock, you can use a little anchovy broth or stock.
Step 7
When the rice cakes start to soften slightly, rinse the soaked Jjolmyeon noodles and add them to the pan. Also, add a handful of chopped green onions. Stir everything together and continue to simmer over medium heat until the Jjolmyeon noodles are fully cooked and the sauce has slightly thickened. Jjolmyeon cooks faster than rice cakes, so be careful not to overcook it once it’s added.
