Ingredients- 2 cups rich soy milk (Junggook’s Soy Milk)
- 3.5 sheets gelatin
- 2-3 Tbsp sugar or honey
- 1 pinch salt
- 2/3 cup sweetened red bean paste (for shaved ice)
- Maple syrup or agave syrup, to drizzle (optional)
Cooking Instructions
Step 1
First, sterilize your pudding cups or serving glasses by immersing them in boiling water. Afterward, thoroughly dry them to ensure no moisture remains. Clean containers are crucial for maintaining the pudding’s freshness.
Step 2
In a small bowl, pour cold water and submerge the gelatin sheets, making sure they are fully covered and not overlapping. Let them soak for about 10-15 minutes until they become soft and pliable.
Step 3
Gently lift the softened gelatin sheets from the water. Lightly press them between your hands to squeeze out any excess water. Be careful not to squeeze too hard, as this can cause the gelatin to clump.
Step 4
Spoon about 2-3 tablespoons of the sweetened red bean paste into the bottom of each sterilized and dried pudding container. This layer will add a delicious sweetness and texture to your pudding.
Step 5
Pour 2 cups of Junggook’s Soy Milk into a saucepan. This forms the creamy base of your pudding.
Step 6
Add 2-3 tablespoons of sugar or honey, and a pinch of salt to the soy milk. Heat gently over medium-low heat. As soon as small bubbles start to form around the edges of the pan and it begins to simmer, immediately remove it from the heat. Avoid boiling for too long, as it can alter the soy milk’s flavor.
Step 7
Add the squeezed gelatin to the warm soy milk. Stir gently with a spatula or whisk until the gelatin is completely dissolved and the mixture is clear. Ensure the gelatin is evenly incorporated to prevent lumps.
Step 8
Carefully pour the warm soy milk mixture over the red bean paste in the pudding containers. Pour slowly and steadily to create a beautiful layer.
Step 9
Cover the pudding containers with lids or plastic wrap and refrigerate for at least 4 hours, or until the pudding is firm and set. Adequate chilling time is essential for the pudding to achieve the perfect consistency.
Step 10
Once the pudding is fully set, you can drizzle a little maple syrup, agave syrup, or honey on top for an extra touch of sweetness and flavor. It tastes even better when drizzled!
Step 11
Enjoy this nutritious snack or dessert – a delicious and healthy Red Bean Soy Milk Pudding! ^_^
