Main Ingredients

  • Pork belly 1600g
  • 1 Onion
  • 1/2 Apple
  • 1 Leek
  • 2 Bay leaves
  • 2 pinches Black peppercorns (about 2 shakes from a grinder)
  • 2 Tbsp Doenjang (Korean soybean paste)
  • 2 Tbsp Mirin (or cooking wine)
  • 1 Tbsp Minced garlic

Garlic Butter Sauce

  • 10 cloves Garlic, minced
  • 1 Tbsp Honey (match the ratio with garlic, 1:1)
  • 1 Tbsp Butter

Cooking Instructions

Step 1

First, prepare the vegetables to be cooked with the pork. Chop the onion into large pieces, remove the core of the apple and chop it into large chunks, and cut the leek into long pieces.

In a bowl, combine 2 Tbsp Doenjang, 1 Tbsp minced garlic, and 2 Tbsp Mirin. Mix well to create a marinade. Apply this marinade evenly over the pork belly. For even better flavor, let it marinate for a while.

Lay the prepared onion, apple, bay leaves, black peppercorns, and leek evenly on the bottom of the inner pot of your pressure cooker, without overlapping. Place the marinated pork belly on top of the vegetables.

Select the ‘High Pressure Steam’ or ‘Steam’ menu on your pressure cooker. Set the cooking time to 40 minutes and start the cooking process. Cooking under pressure ensures the pork belly becomes incredibly tender and moist.

While the pork is steaming, prepare the garlic butter sauce. In a pan, add 10 minced garlic cloves and 1 Tbsp honey. Cook over medium-low heat. Once you can smell the garlic, add 1 Tbsp butter and let it melt together, stirring gently. Continue to cook for a short while, being careful not to overcook.
