  • 3 cloves garlic
  • 1/2 stalk green onion
  • 300g pork belly

First, wash the 3 cloves of garlic thoroughly. You can either thinly slice them or lightly press them with the side of your knife before slicing. This helps release more of their aroma.

Wash the 1/2 stalk of green onion, then slice it diagonally into about 1cm thick pieces. This cut allows the fragrant green onion flavor to infuse well into the oil.

Cut the 300g of pork belly into bite-sized pieces, about 3-4cm. Avoid cutting them too thin, as they might break apart during cooking. Aim for a thickness suitable for braising.

Now, let’s make the delicious braising sauce. In a small bowl, combine 0.5 Tbsp of oyster sauce, 2 Tbsp of soy sauce, 1 pinch of black pepper, 1 Tbsp of sugar, and 0.3 Tbsp (about 1/3 tsp) of curry powder. Mix them well. The curry powder will help eliminate any porky smell and add a unique flavor.

Heat a pan over high heat and add a little cooking oil. Add the sliced garlic and diagonally sliced green onions. Stir-fry for 1-2 minutes until fragrant. This step infuses the oil with their aromatic essence.

Once the garlic and green onions are fragrant, add the pork belly to the pan. Continue to cook over high heat until the pork belly is browned and slightly seared. A light sear adds to the deliciousness.

When the pork belly is mostly cooked, add 150ml of water and the bay leaf. Pour in the prepared braising sauce. Bring to a boil over high heat, then reduce to medium heat.
