Main Ingredients- Zucchini 150g
- Garlic 5 cloves

Step 1
Wash the zucchini thoroughly, remove the ends, and slice it whole as thinly as possible. Using a mandoline slicer will make this process much easier.

Peel the garlic cloves and slice them thinly into slivers.
Step 3
Heat a pan over medium heat, add the olive oil and sliced garlic. Fry the garlic until it’s golden brown and crispy, infusing the oil with its flavor. Be careful not to burn the garlic; a gentle fry is key to extracting its aroma.

Place all the thinly sliced zucchini into a wide bowl.

To the bowl with the zucchini, add the fried garlic and the infused garlic oil, 2 Tbsp of oligosaccharide, 2 Tbsp of balsamic vinegar, a pinch of salt, and a pinch of black pepper. Gently toss everything together, being careful not to break the zucchini slices, ensuring the dressing is evenly distributed.
