Main Ingredients- 1 medium zucchini
- 10 mini king oyster mushrooms (or 2-3 regular king oyster mushrooms)
Cooking Instructions
Step 1
First, wash and prepare the zucchini and mini king oyster mushrooms. Slice the zucchini into half-moon shapes about 0.5cm thick. If using mini king oyster mushrooms, cut them in half lengthwise or into bite-sized pieces. Slicing them too thinly might cause them to break apart during stir-frying, so maintaining a moderate thickness is recommended.
Step 2
Lightly grease a preheated pan with cooking oil. Add the sliced zucchini and mini king oyster mushrooms and stir-fry over medium heat. Cook for about 2-3 minutes until the zucchini becomes slightly translucent and the mushrooms are tender. This step helps to bring out the natural sweetness of the ingredients and enhance their texture.
Step 3
Once the ingredients are somewhat cooked, add 50ml of water and 1 Tbsp of salted fermented shrimp. Saeujeot is crucial for adding that deep umami flavor! Since the saltiness of saeujeot can vary, it’s a good idea to taste and adjust the amount as needed.
Step 4
Continue to stir-fry until the liquid has reduced and thickened slightly. Too much liquid can dilute the flavors, so simmering over low to medium heat is key. Finally, sprinkle in 1 Tbsp of toasted sesame seeds for a nutty aroma to complete this delicious Zucchini and Mushroom Stir-fry. Enjoy it with a warm bowl of rice!
