This is the easiest and most delicious Enoki Mushroom Pancake recipe. It makes a wonderful side dish for meals, perfect as a simple make-ahead side, and is also excellent for holiday feasts. Enjoy the chewy texture and savory flavor!
Main Ingredients- 5 Enoki mushrooms (medium size)
- 3 Eggs
- 1/2 bunch Chives
- 1 Red chili pepper

Step 1
First, prepare the Enoki mushrooms. Select 5 medium-sized Enoki mushrooms and rinse them thoroughly. Trim the base slightly, then slice them thinly about 0.5 cm thick. Lightly coat both sides of the sliced mushrooms with pancake mix. This helps the egg batter adhere better and prevents the pancake mix from burning.
Step 2
In a bowl, crack 3 eggs. Finely chop the chives (washed and dried) and add them to the bowl. Finely mince the red chili pepper (seeds removed) and add it as well. Season with 1/3 teaspoon of salt and whisk everything together until well combined. The chives and chili pepper add both color and flavor.
Step 3
Heat a generous amount of cooking oil in a pan over medium heat. Once the pan is sufficiently hot, dip the pancake mix-coated Enoki mushrooms into the egg mixture, ensuring they are fully coated on both sides. Carefully place them in the hot pan. Spoon any remaining egg mixture, chives, and chili pepper bits generously on top of the mushrooms. Cook over medium-low heat until golden brown on both sides. Flip when one side is cooked and cook the other side until golden brown. The mushrooms will become chewy and the egg coating will be tender, creating a wonderful texture.

These freshly cooked Enoki Mushroom Pancakes are delicious on their own. However, for an enhanced flavor experience, you can serve them with various dipping sauces like seasoned soy sauce, Buldak sauce, or ketchup, according to your preference. They are especially delightful with Buldak sauce, which adds a spicy and sweet kick. They make a great side dish for rice, and are best enjoyed warm!
