Main Ingredients- 400g Deodeok (Tatarian asparagus)
- 1/2 Green chili pepper
- 1/2 Red chili pepper
- A pinch of pine nut powder
- 3 Tbsp Sesame oil
- 1 Tbsp Soy sauce
Marinade Ingredients- 2 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Oligosaccharide (or corn syrup)
- 2 Tbsp Maesilcheong (Plum syrup)
- 1 Tbsp Sesame seeds
- 2 Tbsp Sesame oil
- 2 Tbsp Soy sauce
- 2 Tbsp Gochujang (Korean chili paste)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Oligosaccharide (or corn syrup)
- 2 Tbsp Maesilcheong (Plum syrup)
- 1 Tbsp Sesame seeds
- 2 Tbsp Sesame oil
- 2 Tbsp Soy sauce
Cooking Instructions
Step 1
Gently rinse the fresh deodeok under cold water and pat it dry on a sieve. (Tip: If deodeok absorbs too much water, it might break easily when pounded. If the deodeok is thick, slice it in half lengthwise, then gently pound it with a mallet or the back of a knife to flatten it. Be careful not to pound too hard, as it can release a raw flavor; gentle pounding is key.)
Step 2
In a small bowl, mix 3 tablespoons of sesame oil and 1 tablespoon of soy sauce to create a delicious ‘sesame oil sauce’.

Spread the prepared deodeok pieces flat and evenly brush them with the sesame oil sauce. Layer them as you brush, and let them sit for a while to tenderize and absorb the seasoning.
