Begin by preparing your potatoes. Wash them thoroughly to remove any dirt, then use a peeler to carefully remove the skin. Rinse the peeled potatoes under clean water.

Now, it’s time to slice the potatoes as thinly as possible. Aim for a translucent thinness, similar to how you might imagine dumpling wrappers. This thinness is key to achieving maximum crispiness. If you have a mandoline slicer or a sharp knife, use it to get uniform, paper-thin slices. Lay the slices out so they don’t stick together.
Step 3
Soaking the thinly sliced potatoes in cold water for about 15 minutes is a crucial step to remove excess starch. This process helps ensure your chips will be exceptionally crispy once fried. Let the potato slices sit in the cold water, allowing the starch to dissipate. This technique allows for a wonderfully crisp texture without needing a batter.
