Make a Refreshing and Spicy Fruit Cocktail Curry with Delightful Chunks
The occasional bite of fruit cocktail is incredibly appealing! Try making this sweet, refreshing, and spicy fruit cocktail curry. It’s a delightful twist on a classic! ^^
Ingredients- 3 Potatoes
- 2 Onions
- 1/2 Carrot
- 1/4 Block of Ham
- 4 Cubes of Solid Curry Roux (mildly spicy)
- 1 Can (432g) Fruit Cocktail
- Water
Cooking Instructions
Step 1
Let’s start by preparing the vegetables for our curry. Peel 3 potatoes and 2 small onions. For the carrot, we’ll only be using half of it. If the carrot is dirty, wash it thoroughly before preparing.
Step 2
Cut the peeled potatoes into bite-sized cubes. Place the cubed potatoes directly into a pot.
Step 3
Dice the carrot into cubes similar in size to the potatoes. Add the diced carrots to the pot with the potatoes.
Step 4
Chop the onions into bite-sized cubes, matching the size of the potatoes and carrots. Don’t worry if they are cut a bit large, as they will soften as they cook. Add the chopped onions to the pot with the other vegetables.

Now it’s time to add water to the pot.

Pour in just enough water to cover the vegetables. Adding too much water can make the curry too thin, so be mindful of the quantity.
Step 7
Prepare about 1/4 of a block of ham. Adding ham will enhance the savory flavor and richness of the curry, making it even more delicious.

Dice the ham into pieces roughly the same size as the potato cubes. If cut too small, it might lose its pleasant chewy texture.

Once the water in the pot with the vegetables starts to boil vigorously, add the diced ham. Cooking the ham along with the vegetables will allow their flavors to meld beautifully.

For the curry, I’m using ‘Baekse’ brand solid curry roux in the mildly spicy flavor. Feel free to choose your preferred brand or spice level.

Add 4 cubes of the solid curry roux to the pot and stir until dissolved. Taste and adjust the consistency and seasoning as needed; you can add more curry or a little water. It’s important to stir well to ensure there are no lumps.

Once the curry has reached your desired thickness and seasoning, reduce the heat to low and let it simmer a bit longer. This allows the vegetables to become tender and the flavors to deepen into the curry.

Now, let’s prepare the fruit cocktail, which will add a special touch to this curry.

Open the can of fruit cocktail and let it drain in a sieve for about 2-3 minutes. (If you prefer a sweeter, more liquid curry, you can skip this step or drain it only slightly).

Finally, add the prepared fruit cocktail to the finished curry.

After adding the fruit cocktail, gently stir to combine all the ingredients well. You can choose to include or exclude the syrup from the fruit cocktail based on your preference. Including the syrup will result in a sweeter and spicier curry. Today, I’ll be adding it for a richer flavor! You can adjust it to your liking.
