Essential Ingredients

  • 1 mini rice cooker
  • 370g Nutella (this forms the sweet base)
  • 80g cake flour (for a tender crumb)
  • 15g instant coffee powder (for rich mocha flavor)
  • 1 Tbsp hot water (to dissolve the coffee)
  • 2 large eggs (to bind and enrich the batter)

Cooking Instructions

Step 1

First, dissolve 15g of instant coffee powder in 1 tablespoon of hot water. Stir well until there are no clumps. Once the coffee is fully dissolved, let it cool slightly. (Be careful not to add it while it’s too hot, as it could cook the eggs!) In a large bowl, add 370g of Nutella. Crack in 2 large eggs. Pour in the slightly cooled coffee mixture. Using a whisk or spatula, mix everything together until smooth and well combined. You should achieve a glossy, rich chocolate batter.

Next, sift 80g of cake flour over the batter. Sifting the flour helps prevent lumps and ensures a tender brownie texture. After adding the sifted flour, mix gently with a spatula just until no dry flour streaks remain. Be careful not to overmix, as this can make the brownies tough. Once you have a smooth, lump-free chocolate batter, it’s ready for the next step!

Now it’s time to pour the batter into the rice cooker. Lightly grease the inside of your mini rice cooker with butter. This will prevent the brownie from sticking and make it easy to remove once baked. Carefully pour the batter into the prepared rice cooker. Use the ‘steam’ or ‘cake’ function on your rice cooker and bake for approximately 50 minutes. Keep in mind that rice cooker times can vary. After 50 minutes, insert a skewer or toothpick into the center of the brownie. If it comes out clean or with just a few moist crumbs, it’s done. If wet batter clings to the skewer, bake for another 5-10 minutes. It’s best to remove it when the skewer comes out with only a few moist crumbs attached, ensuring a moist interior with a set exterior. Once baked, carefully remove the brownie from the rice cooker, let it cool slightly, and then enjoy your delicious homemade treat!
