Ingredients- 1 serving of cold rice (warmed or at room temperature)
- 2 large eggs
- 1 stalk of green onion (white and light green parts, finely chopped)
- A small amount of carrot (finely diced)
- A small amount of bell pepper (finely diced, for color)
- 1-2 tablespoons oyster sauce (adjust to taste)
- Pinch of salt
- Pinch of black pepper
- 1/2 tablespoon soy sauce (optional, for extra depth of flavor)
- A little cooking oil or sesame oil (for sautéing scallions)
Cooking Instructions
Step 1
We’ll be using leftover cold rice from the refrigerator for this recipe. To prevent the rice from clumping, it’s best to warm it slightly in the microwave or let it sit at room temperature to loosen the grains before using.
Step 2
Finely dice the carrot and bell pepper for added color and nutrients. If you have picky eaters, you can use a smaller amount of bell pepper as it’s often disliked, focusing on the positive color it adds. For the green onions, chop the white and light green parts finely. Slicing them in half lengthwise before chopping can help them cook more evenly and release more flavor.
Step 3
In a bowl, whisk the two eggs. Then, add the prepared cold rice to the bowl and mix gently with chopsticks or a fork. Coating each grain of rice with egg mixture helps prevent clumping during cooking and results in a fluffier fried rice.

Add 1 teaspoon of salt to the egg and rice mixture. This helps to season the rice evenly as the egg coats the grains.
