  • Ingredient Category : Fruits
  • Occasion : Everyday
  • Cooking : Boil / Simmer
  • Servings : More than 6 servings
  • Cooking Time : More than 2 hours
  • Difficulty : Intermediate

Main Ingredients

  • 430g ripe apricots
  • 400g granulated sugar (can be adjusted based on apricot sweetness)
  • 5-6 generous squeezes of fresh lemon juice (approx. 2-3 Tbsp)
  • A little vinegar (for washing apricots)

Cooking Instructions

Step 1

Prepare your apricots: Choose ripe, firm apricots. Fill a bowl with cool water and add 2-3 drops of vinegar. Gently swirl the apricots in the water to wash them thoroughly. After washing, pat them completely dry with paper towels or a clean cloth to prevent excess moisture in the next steps.

Step 1

Step 2

Once the apricots are washed and dried, carefully cut them in half with a knife to separate the flesh from the pit.

Step 2

Step 3

Place the apricot halves into a blender or food processor and blend until smooth. Aim for a fine puree consistency without any large chunks.

Step 3

Step 4

Transfer the blended apricot puree and all the sugar into a deep saucepan or pot. Place it over medium heat. Stir continuously with a spatula as the sugar dissolves and mixes well with the apricots, bringing it to a gentle boil.

Step 4

Step 5

As the apricot mixture begins to bubble and simmer, you’ll notice some foamy bubbles rising. At this point, add 5-6 generous squeezes of fresh lemon juice. Lemon juice helps balance the sweetness, adds a bright tartness, and enhances the apricot’s natural color. After adding the lemon juice, reduce the heat to low.

Step 5

Step 6

Continue to stir the jam frequently over low heat to prevent it from sticking to the bottom of the pot. Constant stirring is crucial to avoid burning and maintain a smooth texture. Keep stirring gently as it simmers.

Step 6

Step 7

To check for doneness, spoon a little jam onto your spatula. If it flows slowly and coats the spatula thickly, and if a trace of the jam remains on the pot’s surface for a moment after you stir, it’s ready. Turn off the heat. It’s best to remove it from heat when it seems slightly thinner than your desired final consistency, as it will thicken further as it cools.

Step 7

Step 8

Prepare your serving jars by sterilizing them in boiling water. Carefully ladle the hot jam into the sterilized glass jars. Leave a small amount of space at the top of each jar.

Step 8

Step 9

Seal the jars tightly with their lids and let them cool completely before storing in the refrigerator. Your delicious homemade apricot jam is now ready! Enjoy it spread on toast.
