Main Ingredients

  • Black Pork (neck or belly) 500g
  • Fresh Asparagus 1/2 pack
  • Sweet Onion 1/2
  • A handful of Chives
  • High-quality Rice 2 cups
  • Kelp Broth Pack 1-2
  • Water 2 cups

Seasoning Ingredients

  • Savory Soy Sauce 1 Tbsp
  • Aromatic Sesame Oil 1 Tbsp
  • Hint of Honey (to taste)
  • Minced Garlic 1 Tbsp

Cooking Instructions

Step 1

Begin by rinsing 2 cups of rice thoroughly and soaking it in water for at least 30 minutes. This step ensures fluffy and perfectly cooked rice. Simultaneously, prepare the broth by steeping 1-2 kelp broth packs in 2 cups of water for about 30 minutes to extract rich flavor. Before cooking the rice in the pot, add 1/2 Tbsp of sesame oil to the bottom of the pot. This prevents sticking and adds a subtle aroma. Then, add the soaked rice and the kelp broth (or 2 cups of water). Cover the pot with a lid and bring to a boil over high heat for about 10 minutes, until the water starts to bubble vigorously.

Step 1

Step 2

While the rice is cooking, prepare the black pork. Cut 500g of black pork into bite-sized pieces. Lightly season them with salt and pepper for enhanced flavor. Heat a pan with a little oil and sear the pork pieces until golden brown and cooked through. In the same pan, add asparagus spears (cut into appropriate lengths) and sauté them alongside the pork until tender-crisp. This adds a fresh, vibrant element to the dish.

Step 2

Step 3

Once the rice water has boiled and the rice is partially cooked, add the thinly sliced onion and chopped chives to the pot. Next, incorporate the prepared seasoning ingredients: 1 Tbsp soy sauce and a little honey. Gently mix everything together, ensuring the seasonings are evenly distributed throughout the rice and vegetables. Once combined, cover the pot again and reduce the heat to medium. Let it simmer for another 10 minutes to allow the rice to fully cook and absorb the flavors.

Step 3

Step 4

After 10 minutes, carefully lift the lid to check the rice. Gently stir the rice to ensure it’s evenly cooked. Once you’re satisfied with the texture, gently flatten the top surface of the rice. This creates a smooth base for arranging your toppings, making the final presentation more appealing.

Step 4

Step 5

Finally, artfully arrange the pre-seared black pork pieces and the sautéed asparagus spears on top of the flattened rice. Cover the pot tightly with the lid once more. Allow the rice to steam over very low heat for an additional 5-10 minutes. This crucial resting period allows the juices from the pork and the flavors of the asparagus to meld beautifully with the rice, creating an incredibly rich and aromatic Black Pork Sotbap. Serve hot and enjoy mixing everything together!
