Ingredients- 1 fresh apple
- 1/2 cube or concentrate of chicken stock
- Approximately 1/2 cup mozzarella cheese (adjust to taste)
- 1/2 baguette, sliced into bite-sized pieces
- Approximately 400g water
- Pinch of salt (to taste)
- Pinch of black pepper (for enhanced flavor)
- Pinch of dried herbs (e.g., rosemary, thyme, to preference)
Cooking Instructions
Step 1
First, prepare all the ingredients needed for the recipe. Dissolve the chicken stock in the 400g of warm water and set aside. This allows the broth to develop a richer flavor.

Wash the apple thoroughly, remove the core, and thinly slice it. Using a mandoline slicer can help achieve very thin, uniform slices, reducing cooking time and ensuring a tender texture. (Tip: Different apple varieties offer unique sweetness and aroma, so choose your favorite for the best flavor!)

In a pot, combine the thinly sliced apples, the water with dissolved chicken stock, your chosen herbs, salt, and pepper. Bring to a simmer over medium heat, stirring occasionally to blend the flavors.

Once the mixture reaches a gentle boil, reduce the heat to low and let it simmer for about 10 minutes. This allows the apples to become very soft and their natural sweetness and flavor to infuse beautifully into the soup base.

Ladle the cooked apple soup into oven-safe bowls. Arrange 1 to 2 slices of baguette on top of the soup, and then generously sprinkle with mozzarella cheese. The cheese will melt and add a wonderful richness.
