Crispy Spam Sticks with Nuts

With a surplus of Spam from relief packages, I decided to create these special Spam sticks. They are simple to make yet present beautifully and taste wonderfully. The kids absolutely loved them, and my husband, who enjoys a drink, found them to be an excellent accompaniment. We enjoy them with a dipping sauce made from ketchup, homemade tangerine jam, and savory soy sauce.

  • 1 can Spam (small size)
  • 2 eggs
  • 1/2 cup rice flour
  • 1 cup breadcrumbs

Prepare one small can of Spam. Briefly blanching the Spam in boiling water helps to remove any impurities. Cut the Spam can lengthwise into three equal pieces. Then, cut each of these pieces into three more equal pieces, creating stick shapes. Aim for bite-sized pieces that are easy to handle or skewer.

Set up three shallow dishes. In the first dish, place the rice flour (1/2 cup). In the second dish, lightly beat the two eggs. In the third dish, pour the breadcrumbs (1 cup). If you’re adding nuts, mix the finely chopped nuts into the breadcrumbs now for added texture and flavor. Dredge each Spam stick first in the rice flour, ensuring it’s fully coated. Then, dip it into the beaten egg, letting any excess drip off. Finally, coat it thoroughly with the breadcrumbs (or the breadcrumb-nut mixture), pressing gently to help the coating adhere.

Lightly beat the eggs until smooth. Ensure there are no large clumps, as this will help the coating adhere evenly to the Spam.

Prepare 1/2 cup of rice flour, 2 lightly beaten eggs, and 1 cup of breadcrumbs. Mixing finely chopped nuts into the breadcrumbs will add a delightful extra flavor.

Heat a generous amount of vegetable oil in a frying pan over medium-low heat. Carefully place the breaded Spam sticks into the hot oil. Fry them, turning occasionally, until they are golden brown and crispy on all sides. Pan-frying with ample oil is a convenient alternative to deep-frying, as it uses less oil and is easier to clean up afterward. Keeping the heat on low is crucial to prevent the breadcrumbs from burning before the Spam is heated through.
