Main Ingredients- 300g Pork Shoulder (or other cuts like kimchi)
- 1 medium Potato
- 1/2 medium Zucchini
- 100g Oyster Mushrooms
- 1/2 medium Onion
- 1 slice Carrot (thinly sliced)
- 1/2 stalk Green Onion
- 1 block Firm Tofu (preferably for stew or pan-frying)
Seasoning Ingredients- 1/2 cup Soy Sauce (approx. 80ml)
- 3 Tbsp Gochugaru (Korean chili flakes, adjust to spice preference)
- 3 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Brown Sugar (enhances savory notes and adds sweetness)
- 1/2 Tbsp Black Pepper
- 1 Tbsp Minced Garlic
- 1/4 Tbsp Ginger Powder (optional, for extra aroma)
- 1/2 cup Soy Sauce (approx. 80ml)
- 3 Tbsp Gochugaru (Korean chili flakes, adjust to spice preference)

Cooking Instructions
Step 1
Let’s prepare all the ingredients! For the oyster mushrooms, separate the clusters and tear them into bite-sized pieces. Slice the zucchini into about 1cm thick half-moons. Avoid slicing the zucchini too thinly, as it might become mushy when cooked; slightly thicker slices are best. Slice the potato and onion into about 0.5cm thick pieces, either thinly sliced or diced. Cut the tofu into roughly 2cm cubes, and slice the green onion diagonally into large pieces.

Now, let’s get ready to cook. In a large pot, add the prepared pork, potatoes, zucchini, onion, and mushrooms. Fill the pot generously with all the vegetables – this will make the stew even more delicious!

When the pork is cooked through, add the cubed tofu and diagonally sliced green onions. Let it simmer for another boil, then reduce the heat to low and cook for about 5 more minutes. Gently stir to avoid breaking the tofu.
