I usually steam dried radish greens with mackerel, but since I had frozen cutlassfish, I decided to try braising it with the radish greens! The mild flavor of the cutlassfish pairs beautifully with the savory and tender dried radish greens. It’s a dish that makes a bowl of rice disappear in no time! Main Ingredients- Cutlassfish, 16 pieces (moderately sized)
- Prepared dried radish greens, 1 handful (approx. 100g)
- Radish, 1/4 piece (approx. 150g)
- Green onion, 1/2 stalk
- Green chili pepper, 1
- Water (enough to cover the dried radish greens)
Seasoning Ingredients- Doenjang (soybean paste), 2 Tbsp
- Gochujang (red chili paste), 1 Tbsp
- Gochugaru (red chili flakes), 1 Tbsp
- Fish sauce (anchovy), 1/2 Tbsp
- Minced garlic, 1.5 Tbsp
- Minced ginger, 1 tsp (optional)
- Mirin (cooking wine), 2 Tbsp
- Doenjang (soybean paste), 2 Tbsp
- Gochujang (red chili paste), 1 Tbsp
- Gochugaru (red chili flakes), 1 Tbsp
- Fish sauce (anchovy), 1/2 Tbsp
- Minced garlic, 1.5 Tbsp
- Minced ginger, 1 tsp (optional)
- Mirin (cooking wine), 2 Tbsp
Cooking Instructions
Step 1
The first step to enhancing the quality of the cutlassfish! First, cut open the belly of the fish and thoroughly scrape out the black membrane from the insides. This membrane is a major cause of fishy odor, so remove it meticulously. Then, use the back of a knife to scrape off the white scales on the fish’s body until it’s clean.
Step 2
Next, we’ll prepare the fins of the cutlassfish. Use scissors to neatly trim off the fins. Be careful not to cut too close to the body, as this can cause the fish flesh to break apart or burst during cooking.
Step 3
Rinse the naturally thawed dried radish greens under running water a couple of times to remove any debris. Squeeze out the excess water firmly with your hands. If the greens have a lingering raw or astringent taste, you can briefly blanch them in boiling water before use.

Trim the prepared dried radish greens for easier cooking. Cut off any tough stems and then chop them into bite-sized pieces. This ensures the seasoning penetrates evenly, making the dish more flavorful.

Slice the radish into large, fan-shaped pieces so it becomes tender when braised with the fish. Slice the green onion diagonally and the green chili pepper diagonally as well to add spiciness and aroma.

The secret to delicious braised cutlassfish with dried radish greens! Combine all the seasoning ingredients (doenjang, gochujang, gochugaru, fish sauce, minced garlic, minced ginger, mirin) in a bowl and mix well to create a flavorful sauce. The doenjang adds a wonderful savory depth.

In a bowl, add half of the prepared sauce to the dried radish greens and gently mix them together by massaging with your hands. Marinating the greens beforehand allows the flavors to penetrate deeply, resulting in a more delicious dish.

Line the bottom of a pot with the marinated dried radish greens. Pour enough water to cover the greens. Arrange the sliced radishes attractively on top. Bring to a boil over high heat. Once boiling, reduce the heat to medium, cover with a lid, and simmer until the radish becomes translucent and tender, about 10-15 minutes.

Now, carefully add the main ingredient, the cutlassfish pieces. Once the radish is somewhat tender, arrange the cutlassfish pieces nicely on top. Spread the remaining sauce evenly over the fish. This ensures the sauce adheres well to the fish, creating a more flavorful braised dish.

Final step! While the fish is cooking, ladle the broth from the pot and spoon it over the cutlassfish repeatedly. This keeps the fish moist and allows the sauce flavor to permeate deeply. When the fish is almost cooked through, add the sliced green onion and green chili pepper, and simmer for a little longer until everything is well combined.
