Steak Ingredients

  • 140g fresh beef ribeye steak
  • 1 Tbsp high-quality butter (unsalted recommended)
  • 1 tsp fresh thyme
  • 1.5 Tbsp canola oil or grapeseed oil
  • 4 cloves whole garlic (for searing)
  • 2 slices onion (sliced and prepared)

Seasoning and Sauce

  • 10 Tbsp store-bought steak sauce
  • 1 tsp high-quality black pepper
  • 2 Tbsp whole grain mustard
  • 2 tsp coarse salt or sea salt

Cooking Instructions

First, take the fresh ribeye steak out of the refrigerator 30 minutes to 1 hour before cooking and let it come to room temperature. This helps the steak cook evenly.

Generously season both sides of the ribeye steak with coarse salt and black pepper. For a steak about 2.5cm (1 inch) thick, let it sit at room temperature for about 30 minutes to 1 hour to allow the seasoning to penetrate deeply, enhancing the steak’s flavor.

Gently pat the surface of the seasoned ribeye steak dry with a paper towel. Excess moisture can prevent the steak from developing a nice, crispy crust when searing.

Heat a frying pan over medium-high heat and add 1.5 Tbsp of canola oil. Carefully place the seasoned ribeye steak into the hot pan. Searing the steak when the pan is sufficiently hot is key to achieving a delicious crust.

Sear the steak over high heat initially, then reduce to medium heat for about 5 minutes. Flip the steak every 30 seconds for even cooking and a beautiful sear. During the last minute of cooking, add 1 Tbsp of butter and 1 tsp of fresh thyme. Tilt the pan and spoon the melted butter over the steak (basting) to infuse it with rich flavor. (For extra flavor, you can add 2 minced garlic cloves at this stage and cook them with the butter.)

Remove the cooked steak from the pan and place it on a plate or cutting board. Tightly wrap the steak with aluminum foil to seal in the juices, and let it rest for about 6 minutes.
