Main Ingredients- 2 handfuls of zucchini leaves (approx. 200g)
Cooking Instructions
Step 1
We’ve got some fresh zucchini leaves, perhaps from a neighbor’s weekend farm! The first crucial step is to prepare the leaves by removing any tough fibers from the stems. Gently bend and snap the stems in a few places to loosen and pull away the fibrous strings. This will make the leaves much more tender and enjoyable to eat.
Step 2
After removing the fibers, the zucchini leaves look and feel so much softer. This preparation step is key to achieving a pleasant, non-stringy texture.
Step 3
Now, let’s give them a good wash. Fill a bowl with cold water and add 2 to 3 tablespoons of vinegar. Submerge the zucchini leaves for about 5 minutes; this helps to remove any dirt or residues. Afterward, rinse each leaf thoroughly under running cold water.
Step 4
Place the washed zucchini leaves in a colander to drain. However, since we’re steaming them in the microwave, you don’t need to get them completely dry. A little moisture left on the leaves will help them steam beautifully and stay tender.
Step 5
Prepare a microwave-safe container. Ideally, use one with a perforated inner bowl for steaming. If you don’t have a specialized steamer, a regular microwave-safe bowl will work. Place the zucchini leaves in the bowl, cover with plastic wrap, and poke a few holes in the wrap with a fork to allow steam to escape.
Step 6
Arrange the cleaned zucchini leaves neatly in your prepared steaming container. Avoid packing them too tightly; leaving some space will ensure they steam evenly.
Step 7
Cover the container with its lid (or the plastic wrap). Now, microwave the leaves. The cooking time will vary depending on the quantity, typically 2 to 3 minutes. I only had a small amount, so 2 minutes was perfect for me. If you have more leaves, you might need to add an extra minute.
Step 8
Look at that vibrant green color! They’ve steamed up beautifully, retaining their fresh hue. You can almost smell the healthy, earthy aroma.
Step 9
These perfectly steamed zucchini leaves are now ready to be enjoyed as a ‘ssam,’ or wrap! They are ideal for making delicious wraps with rice and your favorite condiments.
Step 10
Don’t these bright green leaves look appetizing? I personally love wrapping them with a spicy and slightly sweet red chili paste (gochujang). Of course, a savory ‘ssamjang’ (Korean dipping sauce) is also a fantastic choice, depending on your preference!
Step 11
Here’s a delicious spicy and sweet red chili paste condiment to go with your wraps. It’s great mixed with rice or enjoyed with the steamed leaves.
Step 12
The true delight of eating zucchini leaf wraps comes when you pair them with slightly cooled, leftover rice. The texture of the rice, along with the tender leaves, creates a wonderfully satisfying combination that’s often preferred over freshly cooked hot rice.
Step 13
Let’s carefully assemble our wraps with the rice and chosen condiment. Fold them neatly and enjoy a delicious bite!
Step 14
Isn’t it amazing how simple and quick it is to steam zucchini leaves using just a microwave? This is truly the easiest way to prepare them. Give this incredibly simple recipe a try and enjoy a healthy and delicious meal!
