Main Ingredients- Pork shoulder/leg 200g (cut into bite-sized pieces)
- Bean sprouts 200g (washed thoroughly)
- Green onion 20cm (sliced diagonally)
- Korean green chili peppers 3 (seeds removed, finely chopped)
- Scallions 2 stalks (chopped, for garnish)
- Minced garlic 1 Tbsp
- Gochugaru oil (Korean chili oil) 2 Tbsp
- Salt to taste (for marinating and stir-frying sprouts)
- Black pepper to taste (for marinating and stir-frying sprouts)
Pork Marinade- Soju 2 Tbsp (to remove pork odor)
- Salt to taste

Stir-fry Sauce- Gochugaru (Korean chili powder) 3 Tbsp
- Water 2 Tbsp
- Soy sauce (brewed) 1/2 Tbsp
- Oyster sauce 2 Tbsp
- Sugar 1 Tbsp
- Soju 2 Tbsp (to remove pork odor)
- Salt to taste
- Black pepper to taste
Stir-fry Sauce- Gochugaru (Korean chili powder) 3 Tbsp
- Water 2 Tbsp
- Soy sauce (brewed) 1/2 Tbsp
- Oyster sauce 2 Tbsp
- Sugar 1 Tbsp
Cooking Instructions
Step 1
First, cut the 200g of pork shoulder or leg into bite-sized pieces. Aim for pieces that are not too large (so the sauce penetrates well) or too small (to retain a good texture).

Place the cut pork into a bowl. Add 2 Tbsp of soju to help remove any pork odor.

Add a pinch of salt.

Sprinkle in some black pepper.

Using your hands, gently mix the ingredients to ensure the marinade is evenly distributed on the pork. Let it marinate for about 5-10 minutes for best results.

Now, let’s prepare the flavorful stir-fry sauce. In a separate bowl, add 3 Tbsp of gochugaru (Korean chili powder).

Add the sliced green onion (about 20cm worth) and 1 Tbsp of minced garlic. Stir-fry for about 1 minute until fragrant. Be careful not to burn the onion and garlic.

Add the marinated pork to the pan. Increase the heat to high and stir-fry the pork, breaking it apart to ensure it cooks evenly until fully done. Cook until the surface of the pork turns white and it’s cooked through.

Once the pork is cooked, add the chopped Korean green chilies and the prepared sauce. Continue to stir-fry over high heat for about 3-4 minutes, allowing the sauce to coat and penetrate the pork. Stir quickly to prevent the sauce from burning.

Finally, add the 200g of washed bean sprouts to the pan. Bean sprouts cook very quickly and can lose their crispness if overcooked. Stir-fry over high heat just until they soften slightly. This high-heat, quick cooking is key to maintaining their crunch!

Lightly season the bean sprouts with a small amount of salt and pepper. Stir-fry briefly, just until the sprouts wilt slightly. Avoid overcooking, as this can release water and make them soggy.
