Before steaming, prick the green chilies a few times with a fork, or slit thicker chilies lengthwise. This helps them steam more evenly and become tender throughout.

Place the green chilies and soy bean powder into a clean plastic bag. Shake well to coat the chilies evenly. This method allows you to coat the chilies without getting your hands messy. Tip: The remaining moisture on the chilies helps the powder stick better. If you don’t have soy bean powder, you can substitute with flour or glutinous rice flour as in the traditional recipe.

Using too much soy bean powder can result in a strong, almost ‘doenjang’-like flavor. If you prefer a lighter coating, adjust the amount of soy bean powder. I personally enjoy the rich, savory taste, so I used it generously. Tip: Steaming for about 5 minutes yields perfectly cooked chilies. For a quicker option, you can steam them in the microwave instead of a steamer!
