Main Ingredients- 200g frozen chicken breast (thawed before cooking)
- 1/2 onion (small)
- 1/4 carrot (small)
- 1 stalk of green onion (white part)
- 1/2 red chili pepper (for color, optional)
- 3 eggs
- 5 Tbsp pancake mix or all-purpose flour (for the batter)
- Vegetable oil, for pan-frying
Donggeurangttaeng Batter Seasoning- 5 Tbsp pancake mix or all-purpose flour
- 3 eggs
- 1 Tbsp soy sauce
- 1 Tbsp tuna extract or soup soy sauce (for umami)
- 20 grinds of black peppercorns (or a pinch of ground pepper)
- A pinch of ginger powder (to remove gamey smell)
- 5 Tbsp pancake mix or all-purpose flour
- 3 eggs
- 1 Tbsp soy sauce
- 1 Tbsp tuna extract or soup soy sauce (for umami)
- 20 grinds of black peppercorns (or a pinch of ground pepper)
- A pinch of ginger powder (to remove gamey smell)
Cooking Instructions
Step 1
First, take the frozen chicken breast out of the freezer about 30 minutes before cooking and soak it in cold water for about 10 minutes to gently thaw. Soaking it slightly in water makes the chicken breast more moist, which makes it easier to mince or grind.
Step 2
Mince the thawed chicken breast finely, either using a food processor or a knife. Finely chop the onion, carrot, green onion, and red chili pepper (if using). The finer you chop the vegetables, the softer the texture will be when mixed with the chicken breast. It’s more convenient to pulse the vegetables together in a food processor. Feel free to use other vegetables you have in your refrigerator (e.g., zucchini, mushrooms, etc.).
