Main Ingredients

  • 200g Crown Daisy (Shungiku)
  • Pinch of coarse sea salt (for blanching)

Seasoning Ingredients

  • 1 Tbsp minced green onion
  • 1 tsp minced garlic
  • 1 tsp tuna extract (for umami)
  • 1 tsp soy sauce
  • Pinch of fine salt (to taste)
  • 1 Tbsp perilla oil (for nutty aroma)
  • Pinch of black pepper
  • 1 tsp toasted sesame seeds

Cooking Instructions

Step 1

Bring a generous amount of water to a rolling boil in a pot. Once boiling, add a pinch of coarse sea salt. Submerge the crown daisy into the boiling water, starting with the stems, and blanch for no more than 1 minute. Blanching briefly like this will keep its crisp texture.

Step 1

Step 2

Remove the blanched crown daisy and rinse it under cold running water 2-3 times. This rapid cooling helps to set the vibrant green color and maintain its crispness.

Step 2

Step 3

Gently squeeze out the excess water from the crown daisy with your hands. Be careful not to squeeze too hard, as it can make the greens mushy. Cut into 2-3 manageable pieces.

Step 3

Step 4

In a bowl, combine the prepared crown daisy with all the ‘Seasoning Ingredients’ listed (minced green onion, minced garlic, tuna extract, soy sauce, fine salt, perilla oil, pepper, and sesame seeds). Gently toss and mix with your hands until the seasoning is evenly distributed. Avoid overmixing to keep the greens tender.

Step 5

Arrange the beautifully seasoned crown daisy salad in a serving dish. Enjoy this fragrant and delicious dish with a bowl of warm rice.
