This is a healthy, preservative-free Naengmyeon sauce I made with love for my husband who adores cold noodles. It’s a versatile sauce that’s also incredibly delicious when used for braised tofu! Enjoy a flavorful and wholesome addition to your meals.
Main Ingredients- 200g minced beef
- 2 stalks of green onion (white parts finely chopped)
- 1/3 pear (peeled and cored)
- 1/6 pineapple (small size, fresh)
- 1/4 onion
Seasoning Ingredients- 3 Tbsp gochujang (Korean chili paste)
- 3 Tbsp soy sauce
- 5 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp sugar
- 3 Tbsp maesilcheong (green plum syrup)
- 3 Tbsp minced garlic
- 2 Tbsp lemon juice
- 3 Tbsp gochujang (Korean chili paste)
- 3 Tbsp soy sauce
- 5 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp sugar
- 3 Tbsp maesilcheong (green plum syrup)
- 3 Tbsp minced garlic
- 2 Tbsp lemon juice
Cooking Instructions
Step 1
First, place the minced beef in a pan with 2 tablespoons of soju (Korean rice wine). Stir-fry until all the moisture evaporates and the beef becomes crumbly and slightly dry. This step helps remove any gamey smell and enhances the flavor.
Step 2
Next, peel and core the pear and pineapple, then cut them into manageable pieces. Place them in a blender and blend until smooth to create a fruit puree.
Step 3
In a large bowl, combine the gochujang, minced garlic, soy sauce, sugar, maesilcheong, gochugaru, and lemon juice. Whisk everything together thoroughly to create the base seasoning mixture. Accurate measurements are key here for the best flavor balance.
Step 4
Add the blended pear and pineapple puree to the seasoning mixture. Stir well until the puree is fully incorporated and the sauce is smooth.
Step 5
Now, add the pre-cooked crumbled beef, finely chopped green onion, and finely chopped onion to the sauce. Mix everything together until all ingredients are evenly distributed and well combined.
Step 6
Transfer the finished Naengmyeon sauce to an airtight container. Refrigerate for at least 3 days to allow the flavors to meld and deepen. This resting period is crucial for the sauce to reach its full, rich taste. Enjoy your delicious homemade Naengmyeon sauce!
