Main Ingredients- 8 chicken tenderloins (sinew removed)
- 1/2 block of tofu
- 2 eggs
- 1/2 green onion (finely chopped)
- Small amount of carrot (finely minced)
- 2 Tbsp flour
Seasoning- 1/2 tsp salt
- 1/2 tsp salt
Cooking Instructions
Step 1
First, prepare all your ingredients carefully. It’s important to remove the sinew from the chicken tenderloins; this ensures a pleasant, tender texture without any gristle. Leaving the sinew in can make the final dish slightly unpleasant to eat.
Step 2
After preparing the chicken tenderloins, you’ll need to mince them finely. While a blender makes this quick, if you want to minimize washing up, you can use a meat mallet or the back of a knife to pound and mince the chicken.
Step 3
Pounding the chicken with a mallet or chopping it with the back of a knife will result in a texture as fine as ground meat, thanks to how tender the chicken tenderloin is. As long as you’ve removed the sinew properly, this method works wonderfully.
Step 4
Mash the tofu using the side of a knife. Using the flat side of the blade will help you achieve a much smoother and finer mashed texture compared to using a spoon.
Step 5
Finely chop the green onion and mince the carrot. Chopping the vegetables finely ensures they mix well into the donggeurangttaeng mixture and provide a pleasant texture when cooked.
Step 6
Now, in a large bowl, combine the minced chicken tenderloin, mashed tofu, chopped green onion, minced carrot, 2 eggs, 2 Tbsp flour, and 1/2 tsp salt.
Step 7
Gently mix all the ingredients together with your hands until well combined. Knead the mixture lightly to ensure all ingredients are evenly distributed and form a cohesive dough.
Step 8
Once the mixture is ready, scoop out about a spoonful at a time and shape them into small, flattened patties. Making them not too thick will help them cook through evenly.
Step 9
Heat a lightly oiled pan over medium-low heat. Place the shaped patties in the pan and cook until golden brown on both sides. It’s important to control the heat carefully to prevent burning and ensure they cook through completely.
