  • 1 packet of agar for jelly (4g)
  • 1 Tbsp vinegar
  • 1 tsp salt
  • 4 stalks of green onion

Braising Sauce Ingredients

  • 1/2 cup soy sauce (100ml)
  • 1/4 cup water (50ml)
  • 1/4 cup sugar (50g)
  • 1/4 cup mirin (rice wine) (50ml)
  • 1 Tbsp sesame oil
  • 1/2 tsp black pepper
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

First, prepare all the necessary ingredients. You’ll need 1 tray of quail eggs, 4 stalks of clean green onions, 1 packet (4g) of agar for jelly, 1 Tbsp vinegar and 1 tsp salt for boiling. For the braising sauce, measure out 1/2 cup soy sauce, 1/4 cup water, 1/4 cup sugar, 1/4 cup mirin, 1 Tbsp sesame oil, 1/2 tsp black pepper, and 1 Tbsp toasted sesame seeds.

In a pot, pour 500ml of cold water and add 1 packet (4g) of agar. Bring it to a gentle boil over medium heat. It’s best to stir continuously to prevent the agar from clumping as it dissolves.

Once the agar has completely dissolved and the liquid is clear, turn off the heat. Carefully pour the mixture into a prepared mold (a shallow, wide container). Let it chill in the refrigerator for 1 hour to set into a firm, springy agar jelly.
