It’s also wonderful with vegetable sticks or as a salad component. Since it’s made from chickpeas, which are rich in plant-based protein, hummus is considered a great option for those on a diet. Unlike some diet foods that can be difficult to eat or bland, hummus offers a smooth texture and a deliciously nutty, mild flavor, making it sustainable for a long-term diet.

Hummus Ingredients

  • 2 cups dried chickpeas
  • 2 celery stalks
  • 3 strips bacon
  • 1 Tbsp minced garlic
  • 2 mini brioche buns

Cooking Instructions

Step 1

Let’s start by preparing the chickpeas for delicious hummus! Measure out 2 cups of dried chickpeas. Place them in a bowl and cover generously with water. Let them soak for at least 6 hours, or ideally overnight. Soaking them before bed makes for a convenient start to your cooking the next morning.

Here’s what the chickpeas look like after soaking for 6 hours. They’ve expanded to about 1.5 times their original size, haven’t they? They look cute and round, just like little chicks! (Haha)

Transfer the soaked chickpeas to a pot. Add about 3 times the amount of water as chickpeas and bring to a boil. Once boiling, reduce the heat to medium-low and simmer for about 30 minutes, or until the chickpeas are tender. After cooking, drain the chickpeas, but reserve about 1/2 cup of the chickpea cooking water. This will be useful later for adjusting the consistency of the hummus when sautéing.

Now, let’s get ready to make the hummus! First, thinly slice the 2 celery stalks crosswise. Also, finely chop the 3 strips of bacon.

In a frying pan, melt butter about the size of a cracker (approximately 10g). Make sure to keep the heat at medium-low to prevent the butter from burning.

Once the butter is melted, add 1 Tbsp of minced garlic (or 1 garlic cube) and sauté until fragrant. As the garlic starts to cook, add the sliced celery and stir-fry over medium-low heat until the celery softens slightly.

When the celery is somewhat tender, add the chopped bacon and sauté together until the bacon is golden brown and crispy.

Finally, add the cooked chickpeas and about 1/4 cup of the reserved chickpea cooking water to the pan. Sauté everything together until well combined. It’s best to add the cooking water gradually as needed when blending, rather than all at once.

Now it’s time to transfer the sautéed mixture to a blender and process until smooth. Depending on your blender’s power, you might need to add a little more chickpea cooking water to achieve your desired consistency. For a creamier hummus, add more cooking water as you blend.

Prepare 2 mini brioche buns for serving. Slice each bun in half horizontally. Place them cut-side down in a dry, preheated frying pan and toast over low heat until golden brown and warm on both sides. This step prepares them perfectly for creating hummus sandwiches.

Generously spread the freshly made, smooth, and savory hummus onto the bottom halves of the warm brioche buns. Look at that beautiful yellow color – it’s so appetizing!

Drizzle a little olive oil over the completed hummus sandwiches and garnish with a few cooked chickpeas for an extra touch of presentation. My husband, after tasting it, commented, ‘Hmm… nutty and savory. Not bad.’ But when I tried it myself, it was wonderfully nutty and delicious! The freshly cooked chickpeas tasted like a sweet chestnut – so clean and smooth. Serving it as a sandwich with the toasted brioche buns enhanced the flavors even further, and the addition of olive oil brought out an even richer creaminess. This hummus is both healthy and incredibly tasty, so do give it a try!
