Essential Ingredients- 200g Aged Kimchi (leaf parts, with excess liquid squeezed out)
- 300g Cooked Rice (warm)
- 150g Minced Beef
- 10g Dried Shiitake Mushrooms
- 1 Tbsp Minced Scallions (green onions)
- 1 Tbsp Soy Sauce
- 1 Tbsp Cooking Oil
- 1 tsp Toasted Sesame Seeds
- 1 Tbsp Sesame Oil
Cooking Instructions
Step 1
To add a fragrant depth of flavor, rehydrate the dried shiitake mushrooms. Soak them in warm water for at least 30 minutes until softened. Once rehydrated, gently squeeze out the excess water and finely mince them.
Step 2
Rinse the aged kimchi lightly under running water to remove any excessive sourness. Separate the leaf parts and cut them into suitable sizes for wrapping. In a bowl, combine the cut kimchi leaves with 1 tablespoon of sesame oil and gently mix to enhance their flavor.
Step 3
Heat a non-stick pan over medium-low heat and add 1 tablespoon of cooking oil. Add the minced beef, minced shiitake mushrooms, and minced scallions to the pan. Stir-fry over medium-low heat, ensuring nothing burns, until the beef is fully cooked. It’s important to cook the beef thoroughly.
Step 4
Once the beef is cooked through, add 1 tablespoon of soy sauce to the pan and continue to stir-fry. This will help the seasoning penetrate the beef, adding a delicious umami flavor.
Step 5
In a large bowl, place the warm cooked rice. Add the stir-fried beef mixture. Using a spatula or spoon, gently mix the rice and the beef mixture until well combined, making sure there are no clumps. Stir in 1 teaspoon of toasted sesame seeds for a nutty aroma and taste.
Step 6
Take portions of the mixed rice and shape them into oval-sized rice balls by gently rolling them between your palms. Be careful not to pack them too tightly, as this can make the rice hard. Aim for a light touch to form well-shaped balls.
Step 7
Place one of the formed beef rice balls onto a prepared kimchi leaf. Carefully wrap the kimchi leaf around the rice ball, tucking in the sides to create a neat package. Your delicious Kimchi Ssambap is now ready, featuring a delightful balance of tangy kimchi and savory beef rice!
