While green onion salad is delicious with grilled meats, stir-fried onions offer a wonderfully different flavor. This dish is a refreshing and slightly tangy accompaniment that will perfectly complement your meals.
Ingredients- 3 onions (medium-sized)
- 2 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp sugar
- 3 Tbsp vinegar (rice vinegar or apple cider vinegar recommended)
- 1 Tbsp fish sauce (anchovy or sand lance)
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, prepare the onions. Three medium-sized onions will yield a generous portion for 2-3 people. Feel free to adjust the number of onions based on how many people you’re serving.
Step 2
Peel the outer skin from the onions and rinse them thoroughly under cold running water to ensure they are clean. This step removes any dirt or debris from the surface.
Step 3
Trim off the root end of each onion. You can do this by thinly slicing it off or by making a ‘V’ shaped cut, like a wedge, to remove it. This makes it easier to separate and prepare the onion layers.

Next, slice the prepared onions as thinly as possible into julienne strips. Thin slices will allow the seasoning to penetrate better and will contribute to a wonderfully crisp texture. If you’re not comfortable with a knife, a mandoline slicer can be very helpful here.

Now, let’s make the dressing. In a large bowl, combine 2 tablespoons of gochugaru, 2 tablespoons of sugar, 3 tablespoons of vinegar, 1 tablespoon of fish sauce, and 1 tablespoon of toasted sesame seeds. Mix everything well. If you enjoy a tangier flavor, feel free to add an extra 1-2 tablespoons of vinegar to your preference. The dressing’s proportions can always be adjusted, so taste and season according to your liking.

Add the thinly sliced onions to the dressing. Gently toss them to ensure the seasoning coats every strand evenly. Be careful not to mix too vigorously, as this can release excess water from the onions. A gentle toss is key to maintaining their crispness. Let the mixture sit for about 5 minutes to allow the flavors to meld together.
Step 7
Once nicely tossed, transfer the delicious stir-fried onions to a serving dish. It’s as simple as that! You can serve it immediately, or chill it in the refrigerator for an even more refreshing and crisp bite.
