Ingredients- Tofu 250g (firm or stewing tofu recommended)
- Onion 1/2 medium
- Butter 2 Tbsp
- Herb salt a pinch (adjust to taste)
- Milk 300ml
Cooking Instructions
Step 1
First, drain the tofu slightly on a sieve. Then, cut it into cubes of about 2-3 cm. This helps the tofu maintain its shape and prevents it from breaking apart during cooking.
Step 2
Peel and wash the onion thoroughly. Slice it thinly into strips. Thinly sliced onions will cook down to a soft consistency.
Step 3
Melt 2 tablespoons of butter in a pot over medium heat. Be careful not to let the butter burn.

Once the butter is melted, add the sliced onions and sauté over medium-low heat until they become translucent. Sautéing the onions well is key to bringing out their natural sweetness.

When the onions are soft and cooked, add the cubed tofu and a pinch of herb salt. Sauté for another 1-2 minutes, allowing the tofu to lightly absorb the seasoning.

After sautéing the tofu and onions together, pour in 300ml of milk. Keep an eye on the heat to prevent the milk from boiling over.

Once the mixture has cooled slightly, carefully transfer it to a blender or use an immersion blender to purée until very smooth. Blend until the tofu and onions are completely incorporated, creating a smooth soup texture. Exercise caution when blending hot liquids.

Return the puréed soup to the pot and gently simmer over low heat until it reaches your desired consistency. Stir continuously to prevent it from sticking to the bottom. Heat through until warm and serve.
