Seasoning Ingredients

  • Gochujang (Korean chili paste) 4 Tbsp
  • Gochugaru (Korean chili flakes) 6 Tbsp
  • Maesilcheong (Plum syrup) 4 Tbsp
  • Cheongju (Rice wine/cooking wine) 2 Tbsp
  • Water 5 Tbsp
  • Soy sauce 2 Tbsp
  • Mayonnaise 2 Tbsp
  • Sesame oil 1 Tbsp
  • Sesame seeds 1 Tbsp

Cooking Instructions

Step 1

Place the dried shredded squid (jinmichae) in a sieve and gently shake off any dust. Cut the jinmichae into bite-sized pieces, about 5-7 cm long. Put the cut jinmichae into a large plastic bag. Lightly spray water over the jinmichae using a spray bottle to moisten it. Seal the bag tightly and gently knead the contents to soften the jinmichae. Let it sit for about 10-15 minutes; this will allow it to become tender and absorb the sauce better.

In a small pot or pan over low heat, combine the gochujang, gochugaru, maesilcheong, cheongju (rice wine), and soy sauce. Stir constantly for 1-2 minutes until the ingredients are well combined and slightly cooked, allowing the flavors to meld. Turn off the heat, then stir in the mayonnaise until smooth and lump-free. Let the sauce cool down slightly as it will be hot. Adding mayonnaise will enhance the creaminess and savory flavor.

Add the softened jinmichae to the cooled sauce and mix thoroughly. Use your hands to gently toss and coat the jinmichae evenly with the sauce.
