Cooking Instructions
Step 1
First, let’s prepare the dressing for the scallion salad. In a bowl, combine 3 Tbsp soy sauce, 1 Tbsp gochugaru (Korean chili flakes), 1 Tbsp toasted sesame seeds, 2 Tbsp blueberry syrup (or corn syrup), 1 Tbsp sesame oil, and 2 Tbsp vinegar. Mix well until fully combined. This dressing can be stored in the refrigerator for several days.
Step 2
Next, prepare the scallions. Trim the roots and tough outer layers of the scallions. Slice them thinly lengthwise into fine strips. The thinner you slice them, the better they will absorb the dressing and the more pleasant they will be to eat. Using the white and light green parts will give the best flavor and texture.
Step 3
Gather the sliced scallions on a cutting board. Hold them together gently with one hand and slice them. To make slicing easier and prevent the scallions from scattering, you can lightly roll them into a bundle before cutting. Be careful not to press too hard, as this can release a raw oniony smell.

Cut the beef into bite-sized pieces, about 1-2 cm thick, which is ideal for grilling and eating. Sprinkle a little all-purpose flour over the cut beef and toss gently to coat evenly. This light flour coating helps prevent the beef from sticking to the pan and seals in the juices during cooking.
Step 5
Peel the garlic cloves and slice them thinly into rounds (garlic slices). Slicing the garlic thinly allows its mild aroma to infuse the beef as it cooks, and the garlic slices can be enjoyed along with the meat. If serving to children, you can mince the garlic instead.

Heat a little oil in a frying pan over medium-low heat. Add the sliced garlic and fry until lightly golden and fragrant. Once the garlic releases its aroma, add the floured beef to the pan. Sear the beef on both sides until it’s nicely browned. Avoid using high heat, as this can burn the outside before the inside is cooked.
Step 7
Once the beef is partially cooked, it’s time to add the final seasoning. Pour in 1 Tbsp soy sauce and 1/2 Tbsp oligodang (Korean oligosaccharide syrup). Continue to cook over medium heat for another 1-2 minutes, turning the beef to ensure the sauce coats it evenly. Keep an eye on the heat to prevent the sauce from burning. Just before turning off the heat, drizzle in 1/2 Tbsp sesame oil for an extra nutty aroma. Serve the finished grilled beef immediately with the prepared scallion salad for a delightful meal.
