Light Chicken Breast Eggs Benedict

Hello everyone! The weather is getting warmer, and our clothes are getting lighter. This means it’s time to get serious about that diet we’ve been putting off! Did you perhaps give up on your New Year’s diet resolution? Don’t worry, it’s not too late! Welcome to the second installment of ‘Diet Cooking with Remi’! Today, I’ve prepared a healthy twist on the American classic, Eggs Benedict, made with chicken breast.

Main Ingredients

  • 2 Pancakes (English muffins or bread slices can be substituted)
  • 5 Fresh eggs
  • 1 imitation crab stick (Kani Kama)
  • 1 handful of your favorite salad greens
  • A splash of lemon juice (for brightness)
  • A drizzle of olive oil (for flavor)

Homemade Hollandaise Sauce

  • 2-3 Tbsp unsalted butter
  • 4 Egg yolks
  • A pinch of black pepper (to taste)

Cooking Instructions

Step 1

First, let’s make the smooth and flavorful Hollandaise sauce. Melt the butter in a pan over low heat. In a separate bowl, whisk the 4 egg yolks. While continuously whisking, slowly pour in the melted butter. This creates the base for our delicious Hollandaise sauce.

Step 2

Pour some hot water into a thermos or insulated bottle, then discard it. Transfer the prepared Hollandaise sauce into the warmed thermos. This will keep the sauce warm and luscious for up to 2 hours, ensuring it’s perfect when you’re ready to serve!

Step 3

Traditionally, Eggs Benedict is made with lightly toasted English muffins. However, since they can be hard to find, I’m using pancakes as a substitute! Toast your pancakes to your liking.

Step 4

Now, let’s prepare our star ingredient: chicken breast! I’m using pre-cooked, microwaveable chicken breast slices. Tear about half of the slices into smaller pieces. In a bowl, combine the torn chicken breast with the imitation crab stick, a splash of lemon juice, a drizzle of olive oil, and a pinch of pepper. Mix well until everything is coated.

Step 5

Once your pancakes are ready, assemble the Benedicts. On the first pancake, generously pile on the chicken breast and crab mixture. On the second pancake, arrange your desired salad greens, then top with the remaining chicken breast slices and a squeeze of lemon juice for extra freshness.

Step 6

Finally, it’s time to bring it all together! Poach your eggs until the whites are set and the yolks are runny. Place the poached eggs on top of the assembled pancakes. Then, generously drizzle the warm Hollandaise sauce from the thermos over everything. Your delicious and healthy Chicken Breast Eggs Benedict is ready to enjoy!
