  • 1 handful dried wood ear mushrooms (approx. 10-15g)
  • 1 piece white wood ear mushroom (approx. 20-30g)

Seasoning

  • 2 Tbsp seasoned soy sauce (mat-ganjang)
  • 1 Tbsp olive oil
  • 1 tsp minced garlic
  • 1 Tbsp chopped green onion
  • 2 Tbsp sunflower oil (or cooking oil)
  • 1 tsp sesame oil
  • A pinch of toasted sesame seeds

Cooking Instructions

Step 1

First, soak the white wood ear mushrooms in lukewarm water for about 15-20 minutes until fully rehydrated. Once softened, trim off the tough stem ends and tear them into bite-sized pieces by hand.

Similarly, soak the dried black wood ear mushrooms in lukewarm water for 15-20 minutes. After rehydrating, remove the tough stem ends and tear them into bite-sized pieces, just like the white wood ear mushrooms.

Heat 2 Tbsp of sunflower oil in a pan over medium heat. Add both the white and black wood ear mushrooms you prepared. Stir in 1 tsp of minced garlic and stir-fry, mixing well with a spatula to prevent sticking, until the mushrooms are tender.

Once the mushrooms are somewhat cooked, add 2 Tbsp of seasoned soy sauce and continue to stir-fry. Taste and if it’s not salty enough for your preference, add a little more soy sauce or season with salt to your liking.

Finally, add 1 Tbsp of chopped green onion and 1 tsp of sesame oil. Stir everything together quickly for another brief moment to ensure all ingredients are well combined. This step should be completed within 3-4 minutes to maintain the chewy texture of the mushrooms.

Turn off the heat and sprinkle with a pinch of toasted sesame seeds, mixing gently. To preserve the delightful chewy texture and prevent sogginess, transfer the freshly cooked wood ear mushroom stir-fry to a serving dish immediately.
