  • 1 Cube of Broth Concentrate (or Dashi/Kelp Broth)
  • Soy Sauce
  • Oligosaccharide (or Corn Syrup)
  • Sugar

Braising Sauce

  • 8 Tbsp Soy Sauce
  • 3 Tbsp Sugar
  • 1 Swirl of Oligosaccharide (approx. 1.5-2 Tbsp)

Cooking Instructions

First, prepare a generous amount of water for boiling the eggs. Once the water reaches a rolling boil, carefully add the eggs and boil for about 12 to 15 minutes. This cooking time ensures the yolks are cooked to a consistency that won’t crumble when braised, offering a delightful texture.

Immediately transfer the boiled eggs to cold water to cool them down quickly. Once the eggs are sufficiently chilled, gently peel off the shells. Handle them with care to avoid cracking the eggs. You can tap them gently to crack the shell all over, then peel under running water for easier removal.

While you’re peeling the eggs, bring the broth to a simmer in a pot with enough water to cover the eggs, adding 1 cube of broth concentrate for a rich flavor base. (If you don’t have broth concentrate, a dashi or kelp broth works well too.) Once the eggs are peeled, carefully place them into the pot with the broth. Add the braising sauce ingredients: 8 Tbsp soy sauce, 3 Tbsp sugar, and 1 swirl of oligosaccharide (about 1.5-2 Tbsp). Bring the mixture to a boil over high heat, then reduce to medium-low heat, cover, and simmer for about 15 to 20 minutes. To ensure even flavoring, gently roll the eggs around occasionally while they are braising. This will help the sauce penetrate evenly, making them even more delicious.
