Main Ingredients

  • 600g Pork Shoulder (sliced thinly for stir-fry)
  • 1 handful Dried Radish (about 100g)
  • 1 medium Onion

Pork Stir-fry Seasoning

  • 1 Tbsp Gochujang (Korean chili paste)
  • 4 Tbsp Gochugaru (Korean chili flakes, adjust to taste)
  • 6 Tbsp Soy Sauce (brewing soy sauce or regular soy sauce)
  • 2 Tbsp Oyster Sauce
  • 1 Tbsp Corn Syrup (for glaze and sweetness)
  • 2 Tbsp Sugar
  • 3 Tbsp Cooking Wine (to remove gamey odor)
  • 1 Tbsp Minced Garlic
  • 1 stalk Green Onion (chopped)
  • Pinch of Black Pepper
  • 1 Tbsp Ginger Juice or 1 tsp Ginger Powder
  • 1 Tbsp Sesame Oil

Cooking Instructions

Step 1

Grate the onion using a grater or blend it finely in a food processor. This will release its natural sweetness and flavor, making the pork more tender and infused with taste.

Step 1

Step 2

Prepare the pork shoulder, which should be thinly sliced for stir-frying. Gently separate each slice so they don’t stick together. Loosening the meat pieces is key.

Step 2

Step 3

Place the separated pork slices into the grated onion. Gently massage the mixture with your hands for about 30 minutes to an hour, or marinate in the refrigerator for at least 30 minutes. This tenderizes the meat and allows the onion’s flavor to penetrate deeply.

Step 3

Step 4

Rinse the dried radish thoroughly under cold running water. Then, soak it in cold water for about 30 minutes to an hour until it becomes soft and pliable. Be careful not to over-soak, as it might lose its pleasant crunch.

Step 4

Step 5

In a large bowl, combine gochujang, gochugaru, soy sauce, oyster sauce, corn syrup, sugar, cooking wine, ginger juice (or powder), black pepper, and sesame oil. Add the minced garlic and chopped green onion, and mix everything well until a smooth, flavorful seasoning paste is formed.

Step 5

Step 6

Add the squeezed dried radish to the marinated pork. Pour all the prepared seasoning sauce over it. Mix thoroughly with your hands, ensuring the sauce is evenly coated on the pork and the dried radish.

Step 6

Step 7

Once the pork is well-marinated, portion it into servings suitable for one meal. Store these portions in airtight containers or zip-top bags in the refrigerator. This makes it convenient for immediate cooking or future use.

Step 7

Step 8

To stir-fry, heat a pan over high heat until it’s fully hot. Add the marinated pork and stir-fry quickly. You can also add thinly sliced onion or diagonally sliced green onions at this stage for extra flavor and texture. Cooking over high heat prevents excess liquid from forming and maintains a desirable chewy texture.

Step 8

Step 9

Once the pork is fully cooked and the vegetables are tender, finish the dish by drizzling with sesame oil and sprinkling with toasted sesame seeds. Enjoy the delicious combination of crunchy dried radish and chewy pork!
