Main Ingredients- 2-3 cups well-fermented kimchi, chopped into bite-sized pieces
- 800g pork shoulder, cut into large chunks
- 2 coin-shaped broth cubes (beef bone broth or anchovy broth flavor)
- 500ml water
- 1 Tbsp sugar
- 2/3 ladleful of soup soy sauce (adjust to taste)
- 1-2 Korean chili peppers, sliced diagonally
Cooking Instructions
Step 1
First, chop the kimchi into manageable, bite-sized pieces and place them into a pot. A little tip: adding a splash of the kimchi juice along with the solids will make the broth even richer and more flavorful.
Step 2
Pour 500ml of clean water into the pot. This will form the base of your stew.
Step 3
Now, turn on the stove to medium heat and bring the mixture to a boil. At this stage, add 2 coin-shaped broth cubes to enhance the savory depth of the stew. Using beef bone broth or anchovy broth flavored cubes will provide a more complex taste.
Step 4
While the stew is coming to a boil, cut the pork shoulder into generous chunks that are suitable for kimchi stew. Cutting them too small might reduce the satisfying chewiness.
Step 5
Add the prepared pork shoulder chunks to the boiling pot. Don’t be shy with the pork; adding a good amount is key to allowing it to absorb the flavors of the broth and kimchi beautifully!
Step 6
Stir in 1 tablespoon of sugar. This will help balance the sourness of the kimchi and add a touch of sweetness and depth. Now, let it simmer and allow the ingredients to meld together.
Step 7
Once the pork is cooked through, taste the broth for seasoning. It’s best to adjust the saltiness with soup soy sauce. Start with about 2/3 of a ladleful and taste, adding more if needed. The goal is to achieve a pleasant, not overly salty, flavor.
Step 8
Add 1-2 Korean chili peppers, sliced diagonally, to the pot for a spicy kick and aromatic fragrance. If you enjoy more heat, feel free to add extra.
Step 9
Finally, reduce the heat to medium-low and let the stew simmer gently for at least 15 minutes, or until the broth has slightly reduced and thickened. The longer kimchi stew simmers, the deeper and more delicious the flavors become. Enjoy a hearty and satisfying meal with this perfectly simmered, piping hot kimchi stew!
