Cooking Instructions
Step 1
First, wrap the ground beef and ground pork in paper towels and gently press to remove any excess blood. Properly draining the blood will ensure a clean-tasting tteokgalbi without any gamey odors.
Step 2
Finely mince the onion and green onion. If you’re short on time, you can use a food processor or blender to mince them, which is much more convenient. Finely minced vegetables will help create a smoother mixture.
Step 3
In a large bowl, combine the drained ground pork and ground beef. Using a mix of different meats will provide a richer flavor and texture.
Step 4
Add the finely minced onion and green onion to the bowl. Also, add 1 Tbsp of minced garlic (frozen and pre-minced), 3 Tbsp of soy sauce, 2 Tbsp of sweet plum extract, 1 Tbsp of sugar, 1 Tbsp of glutinous rice flour, and 1 Tbsp of olive oil. Finish with about 10 twists of black pepper for added aroma. (Using olive oil instead of sesame oil can impart a unique flavor.)
Step 5
Now, mix all the seasonings into the tteokgalbi mixture and knead it vigorously with your hands until it becomes cohesive. The more you knead, the better the meat particles will bind together, resulting in tender yet slightly chewy tteokgalbi.
Step 6
Take portions of the kneaded tteokgalbi mixture and shape them into round, flat patties with your hands. Aim for a size that’s easy for everyone to enjoy, especially children.
Step 7
Reshape the kneaded beef tteokgalbi mixture into neat, round patties, preparing them for cooking. Make sure they are not too thick to ensure they cook evenly all the way through.
Step 8
Air Fryer Cooking Method for Tteokgalbi: First, preheat your air fryer to 180°C (350°F). Arrange the shaped tteokgalbi patties in the preheated air fryer basket, leaving some space between them. Cook for 10 minutes at 180°C.
Step 9
After 10 minutes, carefully flip the tteokgalbi patties over. Continue cooking at 180°C for another 7 minutes. They should be golden brown and crispy on the outside, and perfectly cooked and moist inside. The beautifully browned and slightly crisp appearance is very appetizing.
Step 10
While the tteokgalbi is cooking in the air fryer, let’s quickly prepare a delicious sauce. In a small bowl, combine 1 Tbsp of soy sauce, 1 Tbsp of honey, and 1 Tbsp of perilla oil. Stir well until all ingredients are evenly blended.
Step 11
Once the tteokgalbi is done in the air fryer, carefully remove them and place them on a warm serving plate. Using a brush, generously coat the surface of the cooked tteokgalbi with the prepared sauce. Your delicious beef tteokgalbi is now complete! Enjoy it with a warm bowl of rice.
