Ingredients- 5 eggs
- 300ml stock (e.g., kelp or anchovy stock), thoroughly cooled
- 0.5 tsp fine salt (or to taste)
- 3 Tbsp finely chopped green onions
- 1 Tbsp ground sesame seeds
Cooking Instructions
Step 1
First, pour 300ml of deeply flavored stock, which has been thoroughly cooled, into a microwave-safe steaming dish or bowl. Cooling the stock sufficiently is a crucial step for achieving a soft texture.
Step 2
Crack 5 fresh eggs into a separate bowl and add 0.5 tsp of fine salt. You can adjust the amount of salt according to your preference.
Step 3
Using a spatula or chopsticks, gently whisk the eggs and salt until just combined, being careful not to create too many bubbles. Over-whisking can lead to a coarser texture in the final steamed egg.
Step 4
Add 3 Tbsp of finely chopped green onions and 1 Tbsp of ground sesame seeds (grind them beforehand for a better aroma) to the egg mixture. Stir well until everything is evenly incorporated.
Step 5
Carefully pour the egg mixture into the dish containing the cooled stock. Cover the dish with a lid, or if using plastic wrap, cover it and poke a few holes with a fork. Microwave on high for approximately 7 minutes. (Cooking time may vary depending on your microwave’s wattage.)
Step 6
