Here’s a recipe for mini Vietnamese spring rolls that are as beautiful as they are delicious, making them a must-have for any guest gathering.
Ingredients- 1 Carrot
- Fresh Salad Greens
- 1 can (150g) Tuna
- Mayonnaise
- 5-6 Imitation Crab Sticks (Kamaboko)
- 4 sheets Rice Paper Wrappers
- Store-bought Vietnamese Spring Roll Sauce
Cooking Instructions
Step 1
Wash and peel 1 carrot. Using a julienne peeler or mandoline, cut the carrot into thin matchsticks. This amount is sufficient to make 4 mini spring rolls. Cutting them thinly will enhance the texture.
Step 2
Wash fresh salad greens thoroughly under running water and gently pat them dry. You can use a mix of lettuce, romaine, or red cabbage for a more complex flavor profile.
Step 3
Drain the oil completely from a 150g can of tuna. In a bowl, mix the tuna with about 2-3 tablespoons of mayonnaise until it just comes together and holds its shape – avoid making it too wet. For the imitation crab sticks, shred 5-6 sticks lengthwise and mix them with mayonnaise until lightly coated and moist.
Step 4
Take one large sheet of rice paper. Prepare a shallow dish of lukewarm water. Dip the rice paper into the water for about 10-15 seconds, just until it becomes pliable but not too soft. Carefully lay it flat on a clean cutting board or plate.
Step 5
Generously layer the prepared salad greens onto the softened rice paper. Placing the greens first helps keep the rice paper from drying out and provides a base for the other fillings. Use a bit more greens than shown in the picture for extra crunch.
Step 6
Add a good portion of the julienned carrots over the greens. Next, carefully layer a thick amount of the seasoned tuna mixture on top. Try to shape it neatly to prevent it from falling out.
Step 7
Finally, top the tuna with the shredded imitation crab mixture. If you’d like to experiment, you can easily substitute the fillings with ingredients like fried shrimp, chicken cutlets, or bulgogi to create your own unique mini spring rolls!
Step 8
Once all the fillings are in place, carefully fold the bottom edge of the rice paper over the filling. Then, like rolling a sushi roll or a gimbap, roll it up tightly towards the top edge. Gently tuck in the sides as you roll to secure the filling. Slice the rolled spring rolls into bite-sized pieces, about 3cm (1.2 inches) thick, and arrange them attractively on a plate. Serve with your favorite store-bought Vietnamese spring roll sauce for dipping. Enjoy!
